This is a very simple recipe for delicious Japanese curry. It uses a curry mix and a few other ingredients all of which you can easily get at any Japanese supermarket.

IngredientsGolden curry

  • Curry stock (I usually use the Golden Curry brand)
  • Sliced beef (or cubed is fine)
  • Onion
  • Any other vegetables you want to add, such as eggplant, carrot, etc.
  • Tofu (optional, as this can kind of mess with the taste a bit)
    And, the magic ingredient...
  • Pumpkin!


  1. Slice the onions, chop the vegetables and quarter the pumpkin.
  2. Then start by frying the onions until golden and put them in a bowl. If you are adding other vegetables, any that you think need frying should be fried now.
  3. Next, brown the beef a little.
  4. Put the fried vege back into the pan and add enough water to almost cover the veges and meat. Add the curry cubes, how much? the pumpkin and any other vegetables you didn't fry.
  5. Stir until the curry cubes are all dissolved. Turn the heat down to simmer and simmer until the curry is as thick as you want it.
  6. Serve over freshly cooked short grain rice.

How much curry to use

If you are making a single serve, two cubes of the Golden Curry brand is enough, but with lots of veges you can easily make enough for two meals so then use 4 cubes, or just to taste.

About this recipe

You can do this recipe as simple or with as many ingredients as you want, but trying different things will make it work better to your taste.

The main thing that makes this recipe amazing is the pumpkin. For the simplest version, sliced beef and pumpkin make an absolutely delicious curry. The pumpkin adds a yummy sweetness that is surprisingly good.
